I wonder if there is any way you could add her name to your title deed in a similar way as a "bien de familia" so that she has a right to live there, in which case even if someone else lays claim to the property, they won't be able to force her out. Can a non family member be on a bien de familia?

I think if you want it to be valid for english-speaking countries as well, it would be worth having it officially translated with the sello of the colegio de traductores. If it's important enough for them to stop you boarding, it's unlikely they would just accept that a spanish speaking member...

My visa consultant just emailed me this link. He says that, although there's been no official response from UKBA yet, it looks like the income threshold for family members coming to UK will soon be reduced. May be good news for some of you who will be applying for your spouse visas...
