Too bad they do not explain what the cuts are compared to the ones we are used to in other parts of the world.... The translation sites trying to tackle this subject are sorely lacking. For example, I was looking for beef brisket. I found a meat packer in CF that called it "Cojote" on their diagram of beef cuts but when I called them asking for some, they had no idea what the hell I was asking for. Then I started asking local carniceros and describing where the cut comes from on the cow and the resounding answer is "Tapa de Asado".
