I'll fess up my secret. If you go to Lupita in Las Canitas (Baez 277) on Wed-Sat, sit at the bar and get prepared for a drinking adventure. Ask for Alejandro - he is the main bartender there and if you ask nicely, he'll make you lots of drinks that aren't on the menu. He usually makes me whatever he feels I will enjoy and each time it's different.
He's worked all over the world and is a real artist when it comes to his cocktails. They typically have 2 or 3 different liquors in them, the garnishings are incredible and the taste is out of this world. He's also super nice and will explain exactly what each drink is.
Caveat - the drinks are expensive (usually are 35 or 40 pesos) but they are worth every penny. It's not a place to go if you're just wanting to get drunk but if you are a cocktail afficianado, I highly recommend it!
The food is pretty good there as well. If you sit at the tables, the service is slow and you don't get a chance to do all the drink tastings.
