Burn the meat? Sh*t, you can't get them to cook a steak it past medium rare here!
 
They have no idea, as usual.

Mollejas are great, but take a pill of alopurinoll 300 before it.
 
To treat uric acid and gout apparently.
Obviously we don't eat them every day; once every couple of weeks is fine.
Thing is finding them nowadays. Also you need to ask for the ones close to the heart.
Peon style=chuck an old grill on the ground over the fire, throw the mollejas on and cook slowly, cutting them in half and then turning over for the final cook.
Serve with a hint of lemon and a glass of Malbec.
Job done.
 
The other week I tried Mojellas .. first time .. delicious ... little bit combined with the steak ...

Last week, I decided to cook mollejas by myself for the fist time. I made them boil with laurel in water first, before cooking them.
After boiling them, I started "cleaning" them (removing the kind of skin + the other things around).
Then I was ready to cook them.... not

One of my dogs managed to steal them... grrrrr
