I could name a lot of bands but ill keep it simple.

Of the older stuff:

Spinetta in all his form. One if not THE most mature rock musician of the country. hippy stuff so be warned :D.

Spinetta - Durazno Sangrando (1975)

Patricio Rey y sus Redonditos de Ricota (aka los Redondos). Mostly straigthtfoward rock and roll, with good riffs, come very criptic yet great lyrics and just pure awesomness.

Los redondos - La bestia pop (1986)

Of the new stuff:

Los Natas. Great stonerrock band. Their first two albums are in english.

Los natas - El cono del encono

Pez. Ecclectic band that mixes psicodelic rock, folk and even some tango (esque) feel.

We live in the NW of Argentina and have a restaurant - any one recommend a live band worth hiring?
 
You have quite a few there... my personal favorite: Las Pastillas del Abuelo.

Rata Blanca are hilarious- I guess they have never seen the movie "Spinal Tap"?

You know what they say, those who werent alive in 1974 are doomed to repeat it again and again.

Luckily, I lived thru hair bands the first time.
And once was certainly enough for me.
