I'm looking for fine sugar crystals called caster sugar. Powdered sugar, known as confectioners or icing sugar, is not what I'm looking for. The typical sugar here is very coarse. I could reduce the size with a food processor or blender, but it will be inconsistent. I prefer to buy commercial-made caster sugar if I can find it.
Does anyone have a place where they've seen this?
Thanks for your help.

There are many many baked goods that you need a sugar that can combine easier into the finished product with being gritty...like meringue and specifically shortbread cookies...there are tons of others confections as well.

What do you use it for out of interest?
Why wouldn’t normal sugar work?
Also, what you call normal sugar here is extremely coarse...I could get away with the crystal size of the USA sugar which is smaller but a fine sugar is best ..

Yes, in general the worlds chefs use 6 different crystal sizes of sugar.

Also, I think the meringue here is Italian meringue which uses a hot liquid sugar to incorporate into the egg whites...not the french method
