i'm trying to find butcher shop or something selling panceta. preferrably more the US style but i will take any type of panceta at this point.

i know PIAF sells it but i'm not in their delivery zone. anyone got a lead on another place?

No, but it's similar. Pancetta comes in a tube and is usually sliced very thin, or cubed, depending on the recipe.

You can't go wrong with Satriale's.
 
I think you could get panceta in almost any Chinese supermarket, ours certainly has it. It's basically thinly sliced fatty bacon.
 
Pancetta is bacon, find uncut slabs of it in any good shop with the standard variety of sausages, chorizos, cooked ham, jamon crudo, cheeses, etc.. Minimum order is usually 100 grams and they'll slice it to any thickness you like.

They're Luddites. BTW, they have American style bacon (tocino).

If you loved Kalymnos in Greece you will love these Fiambrerias sort of Italian Deli?

Do they serve eggs and Crisp bacon..?
