I've done the 4x4 tour in Salta (and some surrounding areas) using this company: http://www.socompa.com/ The founder is Italian but the awesome staff are Argentine. They will tailor the excursions based on what you need and want.

not sure if they have 4x4 tours but Poncho Tours is another private tour company up there. Enjoy! Salta/Jujuy the whole north is amazing!!!!
