Really beautiful, how did he tenderize the octopus? Love the whole olives and al dente rice. A really good cook was behind that!
 
How do you keep the octopus from becoming rubbery?

Marinating?
Cooking for short amount of time?
Cooking for an extended amount of time?

Octopus "sushi" is like eating a sliver of tennis shoe sole on rice dipped in soy sauce & wasabi. You guys like to add it to your dishes, so I'm guessing that you're doing something right.

Yop, a cork in the water will make the octopus tender.
Also, you can beat it before cooking it to reach that goal.

Last, you can put some baking soda + eventually some lemon in water then place the
octopus in it for some time before cooking it (this trick seems to be lesser known but it is used a lot by French restaurants).
