The new average meat consumption 112 kg/capita in all meat products, Cow, Pork and Chicken. Anyone seen a butcher shop in this country where the steaks are pink, weighed and labelled . Instead of chunks of meat all mixed up and some sort of dark looking..? B) Help.

Oxidation us what happens naturally if the blood is exposed to oxygen (that's why your blood looks red at first and dark-brownish after it has been exposed to air). I guess here they do not store meat in an artificial controlled environment rich in N2 and CO2. That s us what they do in supermarket and they actually do as a marketing tool with no actual advantage for the meat itself.
