Under Alberto the AFIP Monotributo category thresholds were so low that you practically had no choice but to live partially en negro to avoid surpassing Category H and paying IVA on your declared gross income. Today, the limits are much higher ($68,000 USD annually per person) that it's simply not necessary anymore to do this. You will pay more in transaction fees and lost time trying to move around cash than you will just paying Category A taxes and living with the dignity of having a bank account/debit card/mercado pago/etc.
