i want to buy bondiola, what cut of pork is it called here in the states
 
Boneless pork butt (AKA Boston butt), or boneless pork shoulder.
 
Matambre is best, but 'fatto in casa', the commercial manufactured stuff now is rubbish, learn how to prepare and cook that delicacy and I will go personally to check and taste it for you ;)
