I think that 2000 pesos a month after rent is a lot more than any of the locals have to spend.
My wife and I get by on less than 50 pesos a day to feed both of us. But if you are looking to get health insurance with a private hospital then be prepared to have less than that.
You might be able to make little trips every two or three months. I recommend getting a DNI and coming down here with all the paperwork you need it. It just makes things easier to have it.
But, bear in mind that with inflation, its hard to say how much 2000 pesos is going to get you. The economy is on a bad track and if things get worse, you may have a hard time even trying to teach english here.
