Anyone have advice on how to get a sim card for a phone? Should I get one in the airport? Can I get one without an EID number? What's the best carrier?

All three companies offer one-month plans for tourists. It's easier to stop by a phone carrier's office when you're in the city. You will need your passport, and sometimes they insist on a credit card.

What's the best carrier?
Claro if you want cheap add-on internet packages.
Personal if you're more concerned about speed.
 
Are you already in Argentina? If not, getting a SIM or eSIM at Ezeiza is an excellent option. The Personal office is off on the left behind the Taxi Ezeiza kiosk just before you exit the arrivals area to the car parks. Nothing at Aeroparque as far as I know.

Otherwise, the Personal office on Honduras 4748 in Palermo deals with foreigners (not every office does), and the Abasto shopping centre is also a good option, though crowded in the evenings.

Personal: fast, 5G 300Mbps where you can get it (no 3G any more), smaller data packages
Claro: slower, 3G and 4G, big data packages
Movistar: 3G and 4G, low cost options (Tuenti)
