Sourdough

sam canilla makes a version- great bakery, mostly wholesale, but they sell retail from their tiny bakery on Costa Rica.
 
Thanks. I'm looking for real Sourdough. I've never tried my own starter, but I guess I will try if no other options.
 
Masa madre is different than sourdough, but thanks for the tip.
The only difference is the language you speak. They call it something else in French as well. How are you suggesting it different?

There is nothing special about Sourdough. There are 1000s of techniques to make bread dough though slow natural fermentation, vs quickly using industrial yeast. Then another 1000 techniques on how the baker decides to cook into bread. How much crust, how much sourness, how much whole wheat or rye or white flour, etc… Perhaps you are only used to one common style from some city or town?

The sourdough starter has been made for hundreds of years, “started” from the natural bacterias and wild yeasts that are around the air. Same as the monks who stumbled on making beer. Same reason there are different types of beer based off geographic location.

Yes you can buy a fresh sourdough starter in a jar, or dried in a powder, or ask your neighbor in your home country. Or start your own which is what many do in Argentina to begin their own Masa Madre.

There is difference. Flavor complexity. The lactic acid bacteria and yeast ratio. Sourdough is fermented differently and the taste is completely different. It's not a a difference of language, but thanks.

Yes the thousands of different combinations make it taste different based on the ingredients and techniques to make Sourdough bread. You seem to be asking about the style(s) you are familiar with. Same as saying only real pizza is from Italy. And NYC, Chicago, and Buenos Aires do not make real pizza.

Are you asking about only buying prepared bread or to buy a sourdough starter to make bread at home?
