Salta's a delightful city, but excursions to Cafayate and the Quebrada de Humahuaca are even better.

I was just about to post something similar. Basically that article explains a good weekend trip if you are in a hurry, but I would advice to come for longer as even if you were to get bored of the city there are so many places to go around here. The ones mentioned above among the most important ones.

I was just in Cafayate (and around) last weekend - and even though I have been there 10+ times I never stops to amaze me how nice it is up there (and how great wine you can get!). Highly recommended!

The loop from Salta down to Cafayate, and then back up to Molinos and Cachi and then back down to Salta is one of the country's best road trips.

Unless they REALLY cleaned up the patio de las empanadas in the past couple of years, I would get a hearty lol out of a horde of NYT-reading tourists descending on that place and trying to fight off the bootblacks and beggar kids.
 
I'd also suggest visiting Quebrada de Humahuaca and spending a couple of days in Tilcara, Jujuy. A great place to stay "Patio Alto"(http://www.patioalto.com.ar/eng/quienes_somos.html)
