my great grandfather came here to be a gaucho... how might I search for the name?

I was going to suggest that you try here, the Museo de Migraciones in Retiro. They have lists of all the immigrants who disembarked and signed their names upon entry for the last couple of centuries.
Unfortunately it seems to have been closed for the last couple of years. Try petitioning them for special access to their records.
