I've asked our butcher for authentic veal from calf but he too tells me there is no authentic veal product sold in Argentina. From what I understand they do not butcher young calf here anymore.

We do find guanciale and pancetta at our butcher, which is the pork cheek and works well for my luscious amatriciana and sauteed crispy then sprinkled on top of my salad with pear and endive... yum, mouth is now watering!
