Brown Sugar....for cookies

I use azúcar rubia as a substitute for brown sugar. It doesn't have the same texture as brown sugar in the U.S., but the flavor works. Azúcar negra is a poor substitute; I've been disappointed with the results when I've used it instead of azúcar rubia.
