If you go to Yapeyú, Corrientes, I can recommend this one:

I stayed there with my family 2 years ago and had a great time, and the owners and staff were very nice.

Near Victoria, Entre Rios, we recently visited this one: http://www.estancialagiralda.com.ar/ but only to check the rooms, and we liked it. The people who runs it are very nice also, and the patio is worth a visit.
