Easy Recipes?

I'm starting to get the feeling that all the fish in BC is from Chilean fish farms... i.e. not organic.... i.e. potentially full of antibiotics... :( :( :(

One of my favorite Middle Eastern joints is in Las Cañitas, veeeeeeeeeeeery cheap and so delicious! I make ham and cheese empanadas with the premade tapas and with the large pascualina tapa I make a quiche.

For the quiche, line a cake tin with a large tapa.
Fry up a chopped onion and add 1/2 a chopped red pepper, fry some more
Finely chop a few slices of ham
Chop up or grate 100g cheese
Whisk 3 eggs and 1/2 a litre full-fat milk together, season with salt and pepper
Add the onion, red pepper, ham, cheese and throw in some queso rallado and some herbs (oregano, thyme or basil)
Pour into the pastry case (if not enough to fill it you can add a bit more milk/cream) and bake for 40 mins in medium hot oven.
Fahrenheit, just writing to thank you for this simple recipe! My family absolutely loved it and there wasn't enough so I'll have to double the recipe next time! A great success.

Time your fish purchase with the opening hours of the central market. It is closed on Sunday so Mondays barrio chino fish is leftovers also in most pescaderias. Tuesday is delivery day and everyone goes. If you are looking for popular stuff go early. I think Thurs Fri is also good but not as good as Tues as Tues .
 
2 chicken quarters

10 tbsps of any tomato pulp

2 tbsp oil

red chilies fresh if possible to taste

1 garlic clove

1 tsp cumin

Chop garlic . Heat oil in pan ,fry the cumin without burning then add garlic,infuse a bit again without burning it then add chopped chiles ,swish around for 20 secs and then add tomato. Fry the mix for at least 5 mins or until the consistency is quite thick. Cover the chicken quarters with some of that sauce and cook in oven or covered frying pan until done. Reserve some sauce for dipping your bread in .

Edit : Salt to taste helps too :lol:
