For those who haven't been here for too long here is an important fact: empanadas from Tucuman are tasty tasty tasty. Why? The main difference between an empanada made in BA and one from the north of Argentina is the meat that is used. In provinces such as Tucuman, the beef is normally cut with a knife whereas in BA mince beef is the standard. This is the reason empanadas from Tucuman are regarded as being somewhat more 'sophisticated'. Of course, there will always be people from Salta claiming that their empanadas are just as good but I can't really say because I am biased.

I highly recommend empanadas from La Morada. The bodegon on Yrigoyen St. is very cool but you can just ring them up and order some takeaway.

Can you please share your recipes for the empanadas fillings?

Also some that stray from the mainstream recipes are welcome! I was passed the "classic" filling recipe but it gets boring after a while - especially when you make only one type of filling at time, and you end up having the same empanadas 3 or 4 times in a row.
 
I will give you a good recipe when I see my mother on Friday. I am spending Christmas in Tucuman. I don't know how to make empanadas and it's great that despite you being from another country know how to. What I can tell you is that in Tucuman people normally use matambre (cut with a knife after boiling it for ages) and cumin. In Salta, they use potatoes and raisins in Cordoba. Don't use potatoes! Yuck

I tried empanadas tucumanas at 1810 and I loved them!

What kind of dough do you recommend? Criolla o hojaldre?
 
Criolla, I guess. Very unusual for Argies to use hojaldre. 1810 is very good. Trust me, la morada is even better. A lot of people say El Sanjuanino is excellent too but I much prefer 1810 and la morada.
 
I like empanadas from delivery urbano very much, the shop is in belgrano, on virrey del pino street. The classic empanadas are delicious, as well as the llama, lamb with chocolate and arandanos, ribs with bbq sauce, that are not always avaiable. Teh dough is different. Each empanada is weighted to offer 160 gr of filling with first quality ingredients.
 
If you live near Nuñez or Belgrano, I absolutely recommend empanadas from La Guitarrita (https://plus.google.com/104589393253982072933/about?gl=ar&hl=en).

The dough that they use is delicious, not crumbly or tasteless like some other places, and their beef doesn't come with gobs of icky fat on it, just mouth-watering meat with *just* the right touch of spices and flavor.

My favorite empanadas from La Guitarrita are spicy beef, caprese (basil), and chicken. They also make a very decent pizza and pan de ajo. Yummmmmm!

Sounds interesting! I wonder what you call 'classic'? Do you know whether they use mince?
