All this talk about cookies lately got me baking on the weekend. I made some choc chip cookies and I thought they were divine! Today is 'el dia del amigo' so I thought i'd share the recipe with everyone. Please note... i'm australian so perhaps my cookie standards don't live up to those of the american expats!! I like a softer, chewier cookie, and these are pretty much that.
1c brown sugar
1/2c caster sugar (I used normal fine white sugar)
1 1/2c SR flour
1/2c plain flour
1c chopped pecans
185g melted butter
1 egg, lightly beaten
1 egg yolk
2 tsp vanilla essence
200g choc chips
1. Combine sugars, flours & nuts in a large bowl.
2. Add butter, egg, egg yolk & vanilla and mix to a soft dough. You can do this with a wooden spoon, you don't need beaters.
3. Stir in chocolate chips.
4. Place rounded tablespoons of mixture 6cm apart on a lightly greased oven tray.
5. Bake in moderate oven 15mins or until lightly browned.
My notes:
I bought the 'chips de chocolate' and 'azucar rubia' from my local dietica store.
You could use different nuts or white chocolate if you preferred.
The dough turned around really moist which freaked me out a little so I added more flour, but I think the amount of butter just makes it that way.
They spread heaps so do space them out!
