How to hire a van to take us from BA to Cordoba?

https://www.tiendaleon.com can take you in two different cars from EZE to Retiro Bus Terminal for around 30k pesos. From there you should be able to get a bus to Cordoba for around 10K pesos each. If you are interested in that option, you would have to contact https://www.centraldepasajes.com.ar/empresas-de-micro/flecha-bus.html to see if they have baggage limits and the cost of 10 large bags.
Encomienda is the parcels service operated by the bus companies to use up space in their luggage lockers and make the route more profitable. Some buses even tow a freight trailer. You take the consignment to the start terminal and the recipient (in this case you) collect from the destination terminal. As @Macnudo says, Retiro is the big bus station in Buenos Aires and you can get you and your stuff ferried there from EZE by Tienda Leon. The bus company freight offices are mostly together on a lower level at the back of the building, behind the regular ticket offices. I have only ever used encomienda to ship stuff from Buenos Aires to Paraguay so I've no personal recommendation regarding Cordoba. I suggest you do your research then pre-book your consignment with the company of your choice so that they will be prepared for you when you roll up with the luggage. Hope this helps. All the best!

Ah, very useful information indeed. Big thanks elhombresinnombre and Macanudo (and carride again) for the advice and details and instructions. The information you provided has been both very detailed and helpful and I'm sure will help me get the ball rolling.

Not a bad idea, but I feel like this might be complicated for new arrivals with limited Spanish
Probably right, since we won't be able to speak a lick of Spanish aside from basic greetings and what not. But who knows, maybe we'll get lucky and someone will take pity on the poor gringos (no idea if that term is used there but you know what I mean) and help us out though. Or maybe we'll get even luckier and find a personal driver for the door to door service we're looking for, only at a much more affordable rate. 😋 Whatever the case though, I'm just happy to have gotten some feedback and am now better prepared at least in terms of expectations as well as options.

A decent idea, though if deciding to do the bus to Cordoba after landing at EZE, I would ask for advice on a nice safe and quiet barrio or any town besides going all the way into Retiero from EZE overloaded with luggage. Since the suggestion is already to have a remis or van service drive somewhere, then might as well go directly to a smaller terminal. That will take some advance scouting, but could make for a less stressful morning.

retiro bus terminal is pretty chaotic and intimidating even if you know spanish

2 fresh off the plane non Spanish speaking gringos with 8 pieces of luggage getting dropped off in front of Retiro...I don't see that going well.

May be a famous case of lo barato sale caro.

Aerolineas Argentinas, JetSmart and FlyBondi have flights from EZE to Cordoba. If I were you I would just book two ticket to Cordoba right from Ezeiza airport. It might be cheaper faster and safer that trying to go by land. You might have to pay a bit more for the extra pieces of luggage.
But it might be worth it in the long run. Going by land doesn't make sense.

We're also taking a cat and a dog, so that adds to the flying complications which is another reason we prefer a pickup. Two tickets plus excess baggage fees and pet fees (and paperwork and processing, assuming they'll need it, every flight we're taking to get there up until now does) make me think it'll actually be easier if not cheaper in the long run to get a driver. So for now, I think we'll still try to find a driver to pick us up and take us directly to our address in Cordoba since the whole bus terminal thing is indeed starting to sound a bit too chaotic for us. We don't want to be roaming around looking for services or transporting between terminals with 8 suitcases weighing upwards of 200kg with a dog and a cat and no Spanish skills. We've found some more affordable quotes though, so so far it's looking very feasible.

Got a quote from a remis driver on Mercadolibre for pick up at Ezeiza airport to Cordoba Capital 85000 pesos, around $200. Not sure if you need to have an account to see this listing: https://servicio.mercadolibre.com.a...personas-mascotas-corta-y-larga-distancia-_JM. His car looks a bit small for 3 people and 10 Suit cases, but it might work.

Thanks a ton for the link. I had no idea ML listed services too. The cheapest quote we found so far was $250, and this driver beats that and his car looks pretty suitable, so we'll definitely look into contacting him. I'm able to see the listing without an account, but I I don't think I would have been able to contact him without one so thank you for posting his contact information too. Really appreciated, Macanudo. 👍
