Meat question and pic

I got this from a comida por peso place. What would the big thick juicy meat on the left be ? It has no bones and is quite fatty. Basically how would I buy this myself and cook it myself rather than rely on the sanitation dubious comida por peso places

IMO, it's not the right shape for mollejas. My gut says it's Vacio. Did the meat have a meat texture with just a layer of fat, or did it have a more creamy texture?

Oh right, that sounds more plausible. Vacío is great cut.
 
It's possibly mollejas (or sweetbreads)

Seriously?

My bet is it was just a piece of pork rib without the bone, or some other nearby pork cut.

And to the topic starter: if you’re looking for inspiration, get yourself a great steak somewhere and then try to repeat it at home with a proper beef cut from the store. Way more rewarding, and usually less cooking involved.
