I would appreciate information on where to buy organic, fresh and good quality chicken livers. If it is in CABA it would be better, but I would travel several kilometers to pick them. Thank you.
 
There are a number of providers of Pastoril (pasture raised) and/or libre de jaula whole chickens and eggs. Those are so much better than anything found at the big stores. Less of them seem to sell the livers. Here is one who sells all the menudos. Chat with them to ask about only livers.

Thank you, but COECO products are frozen. I am looking for fresh chicken livers.
It could still be worth emailing or WA with them. They are a Cooperativa Granjera group. They might be able put you in touch with one of the member farms who can sell before freezing. Especially if you are looking to buy kilograms for a restaurant or other food production.
 
They are far from being completely frozen. Yes you see their products around the city in markets that must be solid and frozen, but typically the cooperatives slaughter, quickly chill to just below freezing, and then deliver the same or next day. Pretty close to fresh but healthy and safe. As they say on the website “We also emphasize our cold chain work, which ensures fresh chicken at -4ºC, but not frozen (-18ºC).” And if you talk to them about your needs, they suggest they can work with you. They will explain to you that any “fresh” livers that you see in a high-priced organic butcher shop were also -4c when the butcher accepted delivery earlier that same day.

USDA in USA has the similar regulations so also a good chance “fresh” livers there were briefly below 32 degrees F.:
The term fresh on a poultry label refers to any raw poultry product that has never been held below 26°F. Raw poultry held at 0°F or below must be labeled frozen or previously frozen. No specific labeling is required on raw poultry stored at temperatures between 0 and 25°F.

Thank you for the detailed post. I will reach out to them regarding the distributors. My needs are solely for home consumption, and I only require it occasionally. In my book this is a poison that should be of the highest quality available
