Does anyone know if a rental contract signed in US dollars is legally binding here in Argentina?

Rule of law and Argentina is an oxymoron.

Cuando las operaciones se pacten en moneda extranjera, los respectivos importes deberán convertirse a moneda nacional, aplicando el valor de cotización -tipo comprador- del Banco de la Nación Argentina.

Take it to court and find out. Laws in Argentina aren't worth the paper they are written on.
