Sourdough starter

... yogurt ... (dietetica - ha! They don't sell it anymore as far as I know anyway...

Is there nothing to be gained by having an older starter? I always thought that it was part of the special sourdough mystique...
I bought yoghurt in a dietetica as late as the day before yesterday (1 liter AR$ 11.50) - ask around.

Your starter gets older as time goes by, be patient :) - but IMO the difference is negligible.

PS Note the glass container - never plastic.
 
Which dietetica (or which part of town) is this? Does the yogurt you buy have any label on it indicating who makes it/ where it comes from? My tourist clients are always asking me where to get good yogurt (in Barrio Norte - they are tourists so won't trek across town to get things) and I have been unable to provide a good recommendation for a while.

I'm making liters of yogurt for about 3 pesos 50 these days, and having fun experimenting with it (next up - frozen greek yogurt with honey in the ice cream maker).
