I want to prepare a typical Dutch meal, and I'm after Endive (Escarole, or broad-leaved endive (var latifolia)). When I asked some locals they looked at me like I was crazy, but I'm sure there is a correct spanish term for the vegetable. And more importantly: do they sell it at verdulerias?

Is this a salad vege.. it looks alot like stuff we eat at home often in salads bought from supermarkets..

Hi

There are endivias also at Disco supermarket prewashed and packed.
good luck

Yes I buy them all the time from vegetable stores, they're usually not out in the front though but in a smaller fridge inside.

The endives in Buenos Aires are not as flavorful or bitter as what I'm used to though...

I thought endivia was typical Belgian :D, yes they have it here!
Can you share the recipy?

Helllo:

You can get oragnic coop vegtables delivered to your home. I got the number out of the mag Hecho in Buenos Aires (sold by homeless and/or unemployed people; I really enjoy the magazine, by the way).

THe number to order the vegtables: 4301 9710

A 12 kilo bag with about 10 different vegtables costs 68pesos, and one of them is....endivia!

I had never heard of this vegtable before today! Does anybody know what to do with it?

The first rule with endives is that they should never be washed (washing makes them tasting much more amargo) or at worse, be rinsed very quickly under water.
On my favorite cooking site, there are more than 400 recettes to cook endives, but the most classic are endives with cream, or you can roast them in the oven, make a salad, etc...
