Will they let me bring in canned salmon?

Animal products (meat, seafood, honey, caviar, cheese, jamón etc) are not allowed nor are raw vegetable products (beans, grains, plants etc.)

On the x-ray organic matter shows up a different color. So if they are paying close attention they could ask you to open up and confiscate it. Usually nothing more than that. It does happen, and sadly, happens more often if you look like you’re coming from an “exotic” place.

I have brought pepperoni on a few occasions myself.

No one has ever, not even once, ever desired to check the contents of my food items in my luggage. I guess it's just luck of the draw and I have won every spin of the roulette wheel. (Many, many spins, all in a row. Now if I could do it for real in a casino, I would be rich within minutes.)

Worst I think is a fine from SENASA (the agricultural agency you see in the Aduanas hall) however in practice from those I know who were discovered with forbidden foods and played dumb to the rules, Aduanas just confiscated it and let them go on their way.

Have never heard of anyone actually fined. Personally, I imagine if they fine you then there would be a record of the confiscated goods and protocols to follow.... which would mean no after work salmon party for the Aduanas staff and more actual work...

Note if one tries doing this in the US or some other countries with stricter bio-security enforcement there are far more serious consequences in practice if discovered failing to declare.

Just learned something new - I went to find you information from SENASA and turns out that you can indeed bring CANNED fish despite the information from IATA that says no meat/ fish or dairyproducts at all!
Amongst other things Jamon Iberico (from Spain only, and a few other conditions) and most importantly of all, pasteurised cheese are allowed.

Sausages and various other animal byproducts are indeed a no-no.
If I understand the following correctly, fines can go up to 1 million pesos.
