Advice on large apartment 2000+ sq. ft.

And in more than one word, YES! With a lot of headaches. lol -- it's doable, but getting the businesss licenses etc take a lot of time, then the time for redoing the building, furnishing it etc. If you're interested in an enterprise like that, I'd wait until you really know whether you like BA and until you see what the full effect of the economic crisis is, as by the time you're ready to be up and running, all of your Europeans and Americans may well have disappeared -- there's plenty of argument going on on the board now about whether or not we're already seeing the effects here. All my Argentine friends' companies certainly are, as are two expat friends companies, and yet here on the board they keep saying no no no... with all the restaurants that have shut down in my neighbourhood since November, I'd beg to differ.
