Airline Kicks Passenger Off Plane For Being Too Heavy

I've heard of passengers being relocated from the emergency exit if they're too large.
So my question is how does a pilot know if the plane is too heavy ?.

It's just an approximation based on the empty airplane weight, fuel, number of passengers/bags and cargo.

All modern commercial aircraft have internal scales build in on the landing gear struts.
