(school above is excellent, I don't know about this specific teacher though. You need to understand well Spanish + have some cooking experience since many students already are cooking pros).

If Gato Dumas isn't nearby you (Callao/Cordoba) you can search any culinary school (they are all over town) and most have these extra optional courses that are all open to whomever... called "Short Courses" and most of them have a month-lock Peruvian cooking class at some point in the year. Right now if they are open they will be doing intensive culinary school sessions so there won't be any on but most likely starting March.
