These large Patagonia Rainbow Salmonidae Trout are of higher quality, raised much healthier in better waters, with modern techniques vs older techniques of chile salmon farms. Now a quality export, that we get even fresher in Argentina. A bit smaller fish vs salmon, but not much, still buy a 2.5kg whole head on fish for the grill or 800gm whole filets. We have been buying every 1-2 weeks since the beginning of the year usually one filet raw for a 3 day cure, and the other cooked.
