Now a quality export, that we get even fresher in Argentina. A bit smaller fish vs salmon, but not much, still buy a 2.5kg whole head on fish for the grill or 800gm whole filets. We have been buying every 1-2 weeks since the beginning of the year usually one filet raw for a 3 day cure, and the other cooked.

Seems promising will go try it. Where do you find Salmon Trout products? particularly interesting is the fact that is healthier and produced by newer techniques than the Chilean Salmon . Number two in the world after Norway.
Maybe they will add sliced smoked salmon, my favorite.

I am not in any position to say either of those type of fish is healthier than the other. I know the Chile farmed salmon has well known issues with an abundance of antibiotics, and given a diet of less than ideal processed feed. Plus methods that are damaging to the local environment, which must have some affect on the quality of the fish. Not deal breakers, I guess, but enough for me to want alternatives.

The article posted highlights that they are raised free of antibiotics, with care of the environment in their methodology, including less fishmeal for a more plant based diet. the other positives are described in that news. I do find the fatty section of the fish is different enough vs Salmon that i use it in a fish cake or soup.

I do not know where you can buy. I get the whole 2-2.5kg fish from a restaurant supplier for $18-19000 per kilo. I am told the source is the same as mentioned in article, and from the consistent and constant availability I believe it is of the quality described.

Is the "salmon trout" also known as "truchón". If so, it's available from Rio Caribe by delivery for 32000 Pesos / kg. I had a fillet of this which was very nice. For comparison, pink salmon (from the Pacific) is 41000 Pesos / kg. Prices for fillets. Red tuna 44500 Pesos / kg.

The owner of Rio Caribe told me one sushi restaurant they deliver to prefers the truchón to the pacific salmon.

I do not know. For many years I would buy the small, maybe 700g, whole butterflied trout. Those were inconsistent, probably because of processing, transportation, packaging and local refrigeration issues.

These other bigger trout are always approximately 800g filets, or 2.5kg whole. Vacuum sealed. I have read in the past news that a number of Bariloche area (rio negro y neuquén) farms, the Salmon Trout company included, are all using the same new processing plant which prepare and ship quickly at high standards. So, for this reason I trust most of the large rainbow trout from this area even if they are all not the award winning company mentioned above. I assume they are all using similar technique based on the CONICET knowledge mentioned in the article.
