Just to add a bit of culinary history ,yes there were immigrants from all over Italy, but most did not come with money. The immigrants with money were Galicians and they opened the first restaurants and the hotels that you spell backwards. Of course they cooked Spanish style and the Italian dishes they offered were limited to the absolute favourites of the Italian side of the population. That is the reason also why pizza here is different than in Italy.
As far as the dishes you mention are concerned they probably exist is in some barrio of the beaten track in a corner bar on Sundays only.
Some families probably cook them at home still.
