some of those safes (hotel style) come with two codes: one to use per guest (that resets each time you open) and a master to open once the guest can't remember their code. usually when you buy the safes they walk you through the changing of BOTH defaults.
make sure your safe can't be opened by a simple 0000, or 1234 which usually stays until changed.
if you are really unsure about her loyalties, set a trap. perhaps a crumpled hundred pesos in a place where it looks like you have lost it and you can be 100% sure your maid sees it. just under the bed etc. However be aware you may be creating a new thief out of her, without being certain she is guilty of the last crime.
the best I can do is balance a good worker with limited temptations. It is MY job to make sure there is really nothing they can take. this has worked well for me so far.
it seems simple, but I also suggest you ask for a copy of their documents and their address (regardless if they are legal to work). this seems to make them feel a bit more accountable. it amazes me how many people have maids/cleaners and yet have no idea who is in their house.

It was never my intention to come off racist sounding. I was speaking from experience from the last 4 years here. and to clarify, although I was raised in Canada most of my family is Argentine!).
