I don't consume anything that isn't likely to become "crumbly" and difficult to swallow. Too many geezers die of aspiration pneumonía as a result of inhaling food particles they are unable to swallow. I know from experience that hard cheese poses this danger.Why wouldn’t you consume hard cheese?it’s the best, no carbs, no gluten, no sugar (bugs ate all the lactose), a bit salty for sure but mostly protein and a bit of fat.
I stopped buying hard cheese several years ago for this reason and soon after that I also stopped buying queso cremoso in the supermarket 9when I realized that it contains trans-fats). I can make ricotta at home but I rarely do so. I drink a glass of whole milk in the morning and always eat three or four "soft boiled" eggs at the same time. I repeat this every evening at least two hours before going to bed and I consume at least a tablespoon of butter after eating the eggs and drinking the milk.
If it was available, I would buy full fat cottage cheese and I would eat it every day, especially in the evening to maintain and build muscle.
