A great deal of what I have "learned" about the carnivore diet has been from two doctors who have been highly active on youtube in recent years. Here they are together in one of those videos.
The first person I ever heard about who was eating only beef and drinking only water is Jordan Peterson. He was doing so for reasons of personal health and I remember thinking that I was very fortunate to be able to eat a lot of different foods, including grains, nuts, seeds, legumes, bread, pasta, chocolate and ice cream and other highly processed foods containing or cooked in seed oil, as well as fruits and vegetables. I watched Jordan's videos to learn about his philosophy, not his diet.
I have not consulted a "credencialed nutricionist" about my decision to consume only meat (not just beef), eggs, butter, and full fat milk (with added heavy cream), and ricotta cheese. If it was available, I would consume full fat cottage cheese instead of the milk and the ricotta.
I seriously doubt that I could find any nutricionista in my area that would deviate far from the tradicional food pyramid. It doesn't really matter. The results I've experienced in my own body during the past six years is enough for me to continue my present regimem, which I began by completely eliminating carbs (sugars and starches) from any and all highly processed foods in 2019.
