Has anyone found a suitable type of white cheese here which can be used to make a carrot-cake type frosting? We don't have Philadelphia in my hood, not even sure if it's available still. Have tried Casancrem and Mendicrim and both times ended up binning the results. TIA!

Philadelphia creamcheese is available in barrio chino but in the sushi section (one place I went to had it next to the made sushi rolls).

Will try the Finlandia. Unfortunately I live about 15 subte stops from Belgrano so can't get the Philadelphia!

Finlandia, full fat, unflavored, works like a dream for me. I use only powdered sugar (to taste) and extra vanilla extract, and I omit the usual butter that the cream cheese frosting recipe calls for. Whenever I've served this to friends and visitors from the US, they think they're eating actual cream cheese frosting.
