This is how a good lomo should be when cooked on a thick plancha with high heat, turned over and taken off the heat. Boy was it tasty.
Just returned home from Mercado Del Progreso with the goods .
That lomo on hot placha 4 minutes with stove ON. Other side with stove OFF till it stopped sizzling (10 minutes).
8.5 years since I tasted and smelled meat like that .. (memory is coming back to me).

I`ll tell you ... Man!!! I am speechless, humbled in my content ..... glad I asked.
BTW, for sour cream I mixed 8 oz of Philadelphia cream cheese with 14 oz plain yogurt.

I am grateful to join baexpats, really really nice bunch, informative helpful and even fun to be around.

Sour cream is called "Casan Crema". Available everywhere alongside the yoghurt section. Even comes in a "lite" version! And thanks niaruucia! Your method worked great! Enjoyed my baked potato with Casan Crema alongside!
 
An Argentine friend taught me that trick with the plancha on then turning it off. The juice that comes running out of the lomo is like soup. It's incredible. The quality of the food in Mercado del Progreso is the best. I moved to an apartment one block from it and won't change my location for anything. Good food speaks louder than words.

Sounds like some over cooked lomo to me but I'm very happy that you found the way to meat happiness here in Argentina. Keep cooking.
 
First time I've heard of Mercado del Progreso, and I've been living here for a while. Is there any butcher in particular that is the best within Mercado del Progreso? Thanks

I bought from NUCHO local 150. (my first experiment, so I wouldn`t know about others)
