Mine two favorite cafes are Estacion General de Cafe, in Pueyrredon & Arenales, and the traditional "La Academia" in Corrientes & Callao, where you can still can see old typical porteño men playing domino.

Though it's a bit touristy, mine is Bar El Federal in San Telmo. Year after year I go there and it feels like meeting with an old friend.
