I use carne picada for meat loafs, in chili, for burgers, etc. As ElQueso said, key is to find a good meat store where the picada is good quality.

Pickles - closest I have found is in makro of all places. Not quite US style dill pickles but decent.

Good tip! I've been working on perfecting my meatloaf recently. I'll have to try this!
